Polgoon is now a Healthy Hub! As you probably know because we have been tweeting about it a lot, you can now pick up your Healthy Boxes from us each week. Healthy Boxes are filled with all scrummy local produce and make it easier for you to enjoy great food, be healthy and for a reasonable price! Here’s how it works: 1. Find a Healthy Hub near you by checking the website www.healthyboxes.co.uk 2. Pop along and see you Healthy Helper (us) and let them know when you’d like your box and how you’d like to pay. 3. Your box then gets delivered to the Healthy Hub (Polgoon) for you to take home and enjoy! I am really looking forward to my box this week it contains the following: Potatoes ‘casablanca’, Broccoli, Carrots, Salad bags, Onions, Calvolo nero (black kale), Leeks and Parsnips. Here is what I’m going to make with the kale, with thanks to Louise and the Healthy Box crew for the recipe! Kale ‘seaweed’ salad with sesame and soy Mix a little bit of finely chopped onion with a thumb sized piece of finely sliced ginger, a tablespoon of soy sauce, 2 table spoons of rice wine vinegar, a table spoon of vegetable oil, a tablespoon of toasted sesame oil and teaspoon of salt. Set aside for 10 minutes while you prepare the kale. Take about 200g of kale, trim and shred it then blanch in boiling water for just 10 seconds. Drain it and plunge into iced water. Once it’s well drained and dry – use some kitchen paper if necessary – pop into a large bowl with a sliced avocado, a couple of sliced spring onions and 2 tablespoons of toasted sesame seeds. Pour over the dressing, mix well then allow to stand for 5 – 10 minutes to allow the flavours to develop.
