Description
Our Sauvignon Blanc has it’s own Characteristics. It’s different to a French or New Zealand, it can only be described as wonderfully Cornish.On the nose this wine is lively with notes of lime, passion fruit and pineapple. On the palate it’s crunchy fresh, green apple and tropical fruits with a distinctly Cornish minerality provided by the granite based soil at Polgoon.
WINEMAKING
The Sauvignon grapes are harvested in October, the bunches are de-stemmed and pressed immediately into tank where the juice is chilled to clarify before we pitch the yeast in that transforms the beautifully clean juice into this stunning wine.Then after fermentation and racking we can finally filter and bottle the wine at the end of February ready for you to sample.and enjoy.

Wow! Who knew? Cornish Sauvignon Blanc. This is more reminiscent of a Loire valley Sauv blanc than a punchy New Zealand one. It has the palest colour in the glass and is light and refreshing with a lemony and crisp flavour. I think it’s a beautiful drop.
